About us

Ciao , I’m Paolo Foglia, born in a small village in Campania called Visciano, in the province of Naples. I moved to Canada at the age of 30 in 2004, and I am now 50 years old in 2025. Ciao Napoli was born out of passion, and above all from a personal need to reconnect with the flavors and emotions of my beloved homeland, Naples.

For around 15 years, we have been dedicated to developing the perfect balance of pure energy, creating a culinary experience that allows people to taste the true essence of authentic Neapolitan pizza. Authentic Neapolitan pizza can only be called such when its ingredients are sourced 100% from Campania, Italy—including the oven itself. We are authentic because our pizza, recognized as a UNESCO heritage, must be respected in every detail. We use “00” flour from Italian mills, made from untreated grains, and San Marzano tomatoes from the Agro Sarnese-Nocerino D.O.P. region. Our olive oil comes from the mountains of Liveri (NA), where I personally harvest and cold-press the olives. Our mozzarella is fresh fior di latte from Campania, prepared and shipped according to our orders.

Equally important, our dough is made with natural sourdough starter. After forming the dough balls, we allow a fermentation period of approximately 105 to 120 hours at 5 degrees Celsius. This process ensures high digestibility and lightness. It’s the attention to all these details that results in an exceptional product—one of true prestige, health benefits, and digestibility. It’s all about combining simple, flavorful ingredients, each rich in natural brightness and taste, and uniting them in a way that creates a unique culinary journey. Our goal is to offer what I proudly call a true culinary experience—the Authentic Neapolitan Pizza.
